Clutch Meal :: Ton O’ Roasted Veggies

Yellow Squash
Zucchini
Butternut Squash
Yukon Gold Potatoes
Sweet Potatoes

All ingredients chopped and tossed in olive oil, chopped thyme, chopped rosemary, salt, pepper and garlic powder. Fresh garlic would have been better, but I forgot about it at the last minute. Roast on a flat oven sheet for 30 minutes at 400 degrees.

My wife reminded that I didn’t need the salt (which is true), but I’m not doing any more “cold turkey” changes because they don’t last for me. My salt intake in the last week or so has been drastically reduced and I can feel the difference, so I’m comfortable with this gradual elimination.
